Our collection of Salad Dressing recipes – Why have boring salads when you can jazz them up with this range of fruity salad dressings!

Apple & Thyme Vinaigrette
INGREDIENTS
4 tbsp sunflower/vegetable oil
2 tbsp extra virgin olive oil
1 tbsp vinegar – either cider or white wine (check it is vegan)
generous pinch salt
1/2 tsp mustard – wholegrain or dijon (check it is vegan)
3 tbsp cloudy apple juice
3 stalks fresh thyme
METHOD
Step 1
Strip the leaves from the stalks of the thyme and discard the stalks.
Step 2
Place all the dressing ingredients into a mini chopper, blender or food processor and blitz to a smooth, creamy dressing. Use immediately or keep in a bottle in he fridge for up to a week.
Note: This dressing can be made vegan, just check the vinegar and mustard are vegan and you’re good to go!
Shallot & Pink Grapefruit Dressing
INGREDIENTS
1/2 large shallot, rough chopped
Juice of 1/2 pink or red grapefruit (approx. 1/3 cup)
1/4 cup olive oil
1 Tbsp sherry or champagne vinegar
A dab of honey (about a tsp)
Salt and fresh black pepper to taste
METHOD
Step 1
Put the shallot and the grapefruit juice in the bowl of a small food processor. Blend until the shallot is very finely processed. If using a whisk, mince your shallot as finely as possible. With the machine going, drizzle in the oil through the top.
Step 2
Stop the machine, add the vinegar and honey, then process again to combine. Add the salt and pepper to taste.
Lemon Mustard & Tarragon Vinaigrette
INGREDIENTS
Juice and zest of 1 lemon
A heaped tbsp of fresh tarragon leaves
1 tbsp whole grain mustard
1/4 (plus extra if necessary) walnut oil
Salt flakes
Fresh cracked black pepper to taste
METHOD
Step 1
Put the lemon juice, zest, and tarragon in a small processor. Process until well blended. Stop and scrape down the sides if necessary. Slowly drizzle in the oil as the machine is running.
Step 2
Stop and taste, add more oil if it is too tangy. Add salt and pepper to taste.
Strawberry Balsamic Vinaigrette
INGREDIENTS
1 cup strawberries hulled and quartered
1/3 cup avocado oil or olive oil
1/3 cup balsamic vinegar
1 tbsp honey or maple syrup if vegan
1 tbsp stone ground mustard or dijon mustard
1/2 tsp salt
1/2 tsp ground black pepper
METHOD
Step 1
Add strawberries, avocado oil, balsamic vinegar, honey (or maple syrup), mustard, salt and pepper to a food processor.
Step 2
Process for 1-2 minutes, until smooth.
